Balsamic Fig Glaze

An elegant sweet and tangy glaze made from dried figs and aged balsamic vinegar, perfect for poultry and lamb.
Ingredients(for 0.5 kg)
Dried Figs150 g
Balsamic Vinegar150 ml
Red Wine100 ml
Honey60 g
Fresh Rosemary5 g
Butter30 g
Salt3 g
Instructions

Soaking Figs
10 MinutenRoughly chop dried figs and soak in warm water for 10 minutes, then drain well.

Cooking Base
10 MinutenCombine figs, balsamic vinegar, red wine, honey and rosemary in a pot and simmer over medium heat for 10 minutes.

Blending
2 MinutenRemove rosemary and blend the mixture completely smooth using an immersion blender.

Refining
3 MinutenWhisk in cold butter in pieces until emulsified, season with salt and pass through a fine sieve.
