Brown Sugar30 g
Sweet Paprika15 g
Garlic Powder10 g
Salt12 g
Black Pepper8 g
Honey (for glaze)40 g
Fresh Garlic minced (for glaze)10 g

Instructions

Preparation

15 min + 2 hours resting time

Remove the silver skin from the bone side using a knife and paper towel. Mix all dry ingredients and generously rub the ribs on all sides. Cover and marinate in the refrigerator for at least 2 hours.

Smoking

4-5 hours

Set the smoker to 110-120 °C and add cherry and apple wood chips. Place the ribs bone-side down and smoke for 4-5 hours until the meat starts to pull back from the bones.

Glazing

30 minutes

Mix honey and finely minced garlic. Apply the glaze to the ribs every 10 minutes. Increase the temperature to 130 °C so the glaze caramelizes and forms a shiny crust.

Resting and Serving

10 minutes

Remove the finished ribs from the grill and let them rest wrapped in aluminum foil for 10 minutes. Then portion between the bones and serve immediately.

Pro Tip

For a more intense glaze, brush the ribs with the honey garlic mixture every 10 minutes in the last 30 minutes and slightly increase the temperature to 130 °C.
